Make : Naan Bread

Top India chef Cyrus Todiwala is giving away recipes at Curry.simplybeefandlamb.co.uk.
I found Todiwala's recipe for Naan bread in a magazine. It would make a lovely accompaniment with either his Madras or Rogan Josh recipes.

  1. Preheat the oven and a baking tray to 200C. Naan is unleavened and needs to be hot.
  2. Blend 2 tsp oil with 1tsp salt and 1tsp sugar into 500g self raising flour.
  3. Place in a large bowl and form a well in the middle. Add 150g Greek yogurt, 2 eggs and - gradually- 100ml of full-fat milk.
  4. Once soft and smooth, place the dough in a bowl with another tablespoon of oil over it. Cover and set aside for 2 hours until floppy.
  5. Make into balls 60-80g each. Flour lightly, cover with a plastic sheet and rest until soft.
  6. Roll out the naans, flour and sprinkle with toasted cumin seeds, fresh coriander and/or minced garlic.
  7. Bake at the top of the oven for 5 minutes until browned.
